My new husband and I went to several bakeries in Albuquerque in search of a cake for our wedding. We started in January, so that the bakery wouldn’t be rushed for our June wedding. We met with Jessica, the baker and daughter of the owner of Swiss Alps in early February. It was a bit of a red flag when she told us that she did not do contracts; however, because she agreed to write one, we agreed that this was the place for us. We told Jessica what we wanted, since we had already done several tastings at other places, we had the flavors picked out. The sample we were given was perfect, and we were very excited. She did not have the contract ready in the time she told us she would; however; because it was around Valentine’s Day, we knew she was busy and gave her the benefit of the doubt. When she finally completed the contract, we had more than a few wedding preparations on our mind. My then fiancée quickly scanned and signed it, assuming that she was going to deliver on what we had agreed to. We had gone over her notes, which were exactly right.



The actual cake we got on the big day was beautiful. It had a good flavor, but was overly sweet, because she left out the middle layer of bitter fudge to tone it down. It was a mistake, and mistakes do happen.



What has infuriated me was that when my husband took the supplies back to her, he told her that the cake wasn’t correct. He wasn’t angry, looking for a refund, or another cake (the wedding is over, it’s too late). He just wanted her to acknowledge the mistake. Instead, she immediately became defensive, and made it his fault for not reading the contract. Yes, we made a mistake in assuming she knew what she was doing. This, I do admit to. Unfortunately, the unprofessionalism in refusing to apologize is inexcusable. If you are looking for the perfect cake for your special occasion, I highly recommend finding a baker with the maturity and professionalism that we did not find with Jessica at Swiss Alps Bakery.
