We eat here pretty regularly and are never disappointed. Our last visit on Saturday was, if possible, better than usual. The margaritas were superb! My chicken enchiladas were killed with moist, tender white meat and the sauce was perfect. Aimee's crane asada was to die for. The best we ever encountered. Did they get a new chef?

I love the Deluxe Nacho w/ chicken from the Fairview location. My client gets them for dinner every time I work on a Friday night. I thought I would get some tonight at the nearest location on 10th in Caldwell. One order was HALF the size and cost $10. I asked if I could get some chips with the nachos and extra salsa that was placed in the bag and was told, "No, the nachos are chips." I was shocked at the response I got and told them that I have always gotten chips and salsa with my nacho order at the other Guadalajara location. The gentleman just shrugged his shoulders. If I had eaten in the restaurant I'm assuming I would have gotten chips even though my dinner was also going to have chips ... right? I was not impressed with my order. It was cold and too expensive for the small portion. I will not be going back or recommending the Caldwell, Fiesta Guadalajara. Keep on driving and go to El Tenampa in Nampa, they have much better food and chips and salsa to boot!
