Heed the other persons warning. As I should have. I dropped off a cooler of boned and skinned deer that I could barely lift. Maybe 60 lbs of meat. A week later he said it weighed 32. Upon weighing the box, I had 18 lbs of meat. Well over half the meat. On top of that, he said that with the bones and skin and hair they had to re-clean it. You can't take bone and hair off of meat that has no bones in it or hair on it.

Do not use this butcher. While my family in the past has enjoyed good service from them, this is no longer the case. Out of three animals brought in to be butchered this year all of them were missing meat and averaging under 30% of meat to hanging weight. Back straps and tenderloins were just magically missing in all three cases and the owner simply indicated that we find a new butcher shopi f we were not happy. It is a sad day when a small fork horn brings in more meat than a significantly larger 250 lb deer. I am sure someone is stealing meat we spent months scouting and hunting for, and then paid for to be processed but never received. Out of 2 deer and one elk there was less than 200 lbs of meat and a single tenderloin steak. Very shady. I am taking the owners advice and I will be using a different butcher from now on.
