Wow, met Budd at Kitchen Witch. I finally have found someone for all my knives, even my very expensive sashimi knife. He sharpens for the Hotel Del, and other high end restaurants, only problem is he's only in the area once a month, but it's worth it.

If he does your knives, be careful.
