When I walked under the "Grand Opening" banner and opened the door to Olivia's Bistro, I was expecting to walk into a typical Pho shop and by typical I mean mismatched 80's decor and loud noises piercing from the kitchen. I was surprised, shocked really. The interior is fresh, warm, modern and even "upscale", it looks like the kind of place you want to sit down and eat, rather than a place you can't wait to get out of. There was obvious effort put into designing the dining room, paying attention to the details of the diner's experience. The same attention came through in the food as well. Noodles cooked perfectly, really fresh vegetables and an elevated quality to just about everything that showed they are serious about the Bistro thing. The really good news? I didn't have to spend any more than I would have at one of those Pho places.
