My wife and I have been shopping here for about eight years. The store is well run. I wanted to tell you all about the excellent tasting fillet of Salmon we had last night. We cook it in the pan modeled after a my favorite recipe from Japan. (Here's another trick my Fish Monger Patty says about storing fish. The proper way is to put ice in a large flat bowl.in your frig. Then rest the fish on it until you cook it. If it goes into the second day, it's OK to flip the package.) To cook set fish out on counter. Heat olive oil and chopped up garlic for a few minutes. Put the skin side down and cover for approximately 6 minutes. Flip it over and remove the skin. Cook approximately 6 more minutes. At the end of the cooking take about one half of lemon and squeeze it on the fish and cover. Let stand for a few minutes without heat for a few minutes as your balsamic rice finishes. Serve it over rice with some Kikkoman soy sauce and an accompaniment of cooked carrots or peas.
