My wife is Mexican and we went here for Cinco De Mayo. Hands down the worst meal (not just Tex Mex) that I have ever had. We started with the wait staff not knowing the names of the dishes we ordered. When the food was brought to the table, my wife was given a dish that she did not order. So it was sent back for the correct dish. When the wait staff served the new order we were told that I had her order and the new dish was mine. As we started eating the food texture and taste were similar supper market microwaved chicken breast patty with a poorly flavored sauce over it.

Although the wait staff apologized, the manager never came out to apologize for the mix up. Horrible experience!

I have been eating mexican food since I was 3 years old starting in Corpus Christi.I have lived in Chicago, Indianapolis, Newport RI, San Francisco, Denver, Orlando, and Dallas. I have tried Mexican food in all of these places, as well as places in between,and even in Mexico. I know what I like and what I don't like. Good meat is a must ! Good cheese, different types, sometimes mixed together! Great salsas, quesos, chili red and green. Must have my avacado dip or salads of some kind.Variety is important too. The use of fish, ground beef, chicken with no bones, shredded beef, and quality pork is a must. Well, I have not had any better overall experience as far as the food goes than at Ernesto's. The best rice I ever had was in a restaurant in Albuquerque. It was very moist and had different types of peppers in it. Beans should have more cheese, but this is hard to find also.

The server is most important for at Ernesto's the server makes the avacado dip at your table. If he or she does not mix it properly, allowing the avacado taste to be dominant, it is not as good. I have had 1 excellante server and 5 so-so. Still the overall rating of the servers has been an 8 out of 1-10. The atmosphere is good, although I have had better but with poor food and bad service. Tis better that the food is good ! Wish they had a live mariachi band sometimes. Let's put it this way...they are as good as a lot older restaurant in the Dallas area known as El FXXXX. and have less of a crowd.

Found this after a day of shopping on Broadway in little downtown Prosper. Great Mexican food!
