I ate breakfast at Flames today and had the Chilquiles plate...might as well have called it Nachos with eggs. Anyway, I ate at the counter and watched servers at work: they moved from the adding machines to the toaster to the menus, scooping food with their fingers if it got in the way and wiped their hands on their aprons. They handled newspapers and cash while they handled toast and eggs with their hands. I watched a server pour the contents of a larger plate onto a smaller plate with his fingers and picked up any extra food from the counter and back to the plate before going back to the cash register and his receipts, passign by another servers on her way to serving toast tov a customer after handling it with the same fingers she had just been counting cash with. It was a dizzying 1/2 hour of utter disregard for santitary practices. Of course, I had the time to watch becasue my order of chilaquiles took 25 minutes...and I discovered a a dark, mushy french fry mixed with my fried tortilla chips. Around me, I noticed more servers handing sharer tips to one another before returning to the toaster to spread butter on toast, toss slices from one plate to another, run their hands through their tired hair, and hurry the orders to the hungry customers. I tried to finish my breakfast but couldn't...probably shouldn't have touched it at all and refuse to pay. I left no tip. The hostess said as I left, "have a safe day." I'm thinking: too late, honey. Stay out of Flames or maybe spend the night on the toilet.
