He also spent time at the famed Fleisher’s Grass-Fed & Organic Meats in Kingston, NY. Eddy has the rare combination of being an acclaimed chef and butcher and is now excited to be applying his skills at his own new venture, A Cut Above Butcher Shop.

This butcher shop is quite impressive. Their wide variety of meats coupled with their friendly and knowledgeable staff is what sets them apart from your run of the mill butcher's block. Whether you're looking for pork shoulder, dry-aged cuts, guanciale bacon and even jidori chicken, they always happen to have those hard to find specialty items. Also, their commitment to the nose to tail concept is a big plus in terms of sustainability.
